Christmas Lunch: Recipe for Tropical Christmas Ham

As part of Christmas Lunch, I will attempt to make my very first Tropical Christmas Ham. The recipe is from the Internet so if you are feeling just as adventurous as I am, give it a go!

Tropical Christmas Ham
3.2kg ham
30g whole cloves
65g packed brown sugar
5/8 can pineapple rings in heavy syrup
65g chopped maraschino cherries
210ml lemon-lime flavoured carbonated beverage

  1. Preheat oven or hooded BBQ to 160 degree celsius
  2. Place ham in a disposable roasting pan. Score the rind of ham with a diamond pattern. Place a clove in the centre of each diamond.
  3. Drain the juice from the pineapple rings into a medium bowl, and stir in the brown sugar and lemon-lime soda. Coat the ham with this mixture. Arrange the pineapple rings over the outside of the ham. Place a maraschino cherry in the centre of each pineapple ring, secure with a toothpick.
  4. Bake uncovered for 4 hours, basting frequently with the juices, until the internal temperature of the ham is 160 degree celsius. Remove toothpicks before serving
